Cheese-filled Zucchini Rounds Topped with Fresh Tomato Bruschetta Sauce

Cheese-filled Zucchini Rounds Topped with Fresh Tomato Bruschetta Sauce Recipe

Ingredients

  • 4 large zucchini sliced thinly, lengthwise about ¼ inch
  • 1 - 6oz container Shire’s Garlic & Herb Cheese Spread
  • 2 heirloom tomatoes, chopped.
  • 2 cloves garlic, crushed
  • 1 cup basil chopped
  • ¼ cup olive oil
  • 2 TBS Balsamic Vinegar
  • Salt to taste

Instructions

  • Set oven to 350 degrees. Place parchment paper on a large baking sheet. Add sliced zucchini and pat dry. Add salt and pepper to each side. Cook for 5 minutes.
  • Remove from oven but keep the oven on. Add a dollop of Shire’s Garlic & Herb Cheese to each zucchini slice, spread the cheese on the zucchini, and roll. Place rolled zucchini into a casserole dish. Bake for 8 minutes.
  • In a separate bowl, add the remaining ingredients, tomatoes, garlic, basil, oil, balsamic, and salt, and stir for a fresh tomato sauce.
  • Once the zucchini is out of the oven, top with fresh tomato sauce and serve with your favorite flatbread or pasta.
